
Canh chua khóm.
Maybe one of the classical Vietnamese dish. So far
as I know almost nobody gets it right. Except my wife.
It features 20 or so main ingredients- most of them
herbs which give an exquisite sweet-sour taste which
is hard to describe. This is a first time I eat this dish
in a vegetarian version. It should not surprise, almost
all Vietnamese dishes have vegetarian as well as regular
version. Normally fish would be the broth base for a
soup. What's here? Of course tofu. Much, much lighter
then a regular and I would say tastier too. It lacks the
standard "fishy" taste. Wonderful!
