Cơm xào tôm chay - Vegetarian shrimp fried rice

Cơm xào tôm chay.

I never thought that fried rice dish can be made
without chicken, beef or pork which is generally
figures as a main ingredient. It's a quiet economic
dish which does not require a main menu dish as it's
already included in rice! Carrots, red pepper, beans-
you name it! In regular version it also comes with a
small fish sauce dipping saucer and red cayenne
pepper squished into it for a hot and spicy taste.
Vegetarian version doesn't allow a fish sauce. Why would
it? That's why it named "fish"! So the excellent substitute
is an organic soy sauce which comes without that "fishy"
smell of a regular Nước Mắm.
